I love a good home cooked meal. Some days I need something warm and filling to feed the family, but something that’s quick to make. I’m not the only mom in the world who has this issue–as a matter of fact it’s such a common thing that Walmart created an entire “Simple Meals” section on their website to share some quick, easy and tasty meals you can cook up quickly. You know. Simple.
They asked me to try out a meal from the website. I chose the Velveeta Nacho Bake because I just love anything cheese and anything nacho. We were encouraged to do our own spin on the recipe, but it sounded so good as written that I decided not to change a thing.
The recipe starts with Velveeta Shells and Cheese (an easy staple to keep in the cupboard) and layers in taco meat, cheese, salsa and chips. Mmmm.
I made this meal on a snowday when I had not only my own kids home from school, but my best friend’s teenage son. The recipe made 4 large servings for us–but I was feeding a couple of teenagers. If you were normal people and added a salad or vegetables as a side you would probably feed 6.
The recipe was a resounding success. Everyone ate voraciously and the teenager even asked me to share the recipe with his mom. You can’t get higher praise than that from a 16 year old male!
Ingredients
- 1 pk Velveeta Shells & Cheese Dinner
- 1 lb Ground Beef
- 1 pk Taco Bell Taco Seasoning Mix
- 2/1 C Breakstone Sour Cream
- 3/4 C Kraft Shredded Cheddar Cheese
- 3/4 C Taco Bell Thick & Chunky Salsa
- 1/2 C Tostitos Corn Chips, Crushed
Instructions
- Preheat oven to 400.
- Prepare Dinner as directed on package.
- Cook meat with taco seasoning as directed on package.
- Add sour cream to the macaroni and cheese.
- Spoon half the macaroni and cheese/sour cream mixture into a deep dish pie plate or 8 inch square baking dish. Layer on meat mixture, half the cheddar cheese, and the remaining macaroni and cheese.
- Bake 15 minutes.
- Remove from oven, spread salsa on top of the casserole, then crushed chips, then cheese.
- Return to oven and bake an additional 5 minutes.
